Cucumber Soya Pancake (Healthy Breakfast)
|Grated cucumber||1 Cup (16 tbs) (thickly grated)|
|Soya flour||1⁄2 Cup (8 tbs)|
|Semolina||1⁄2 Cup (8 tbs)|
|Finely chopped green chili||2 Teaspoon|
|Finely chopped coriander||1⁄2 Cup (8 tbs)|
|Low fat curd||2 Tablespoon|
|Oil||2 1⁄4 Teaspoon (for greasing and cooking)|
|Water||1 Cup (16 tbs)|
1. In a bowl, combine grated cucumber, soya flour, semolina, green chili, coriander, curd, salt and 1 cup water. Mix well to make a batter of pouring consistency.
2. Heat a griddle and grease it lightly using ¼ teaspoon of oil.
3. Pour a ladleful of the batter on it and spread in a circular motion to make 5- inch diameter pancake. Cook the pancake using ¼ teaspoon of oil until golden brown on both sides. Repeat to make more.
4. Serve hot with nutritious green chutney.
