Chhena Aur Paneer
|Creamy milk||2 1⁄2 Cup (40 tbs)|
1)In a saucepan, boil milk, then remove from heat and stir it to cool.
2)Stir in lemon juice and keep stirring until the milk curdles and cream and water separate properly.
3)Filter the curdled milk through cheesecloth and squeeze out water to get moist mass-chenna.
4)Use the chenna in as desired.
If you wish to have paneer, make a ball of the chenna, flatten it, put it underneath a wooden board and place a heavy object on the top. Leave for about 2 hours. At this stage the flattened cheese can be cut into desired shape such as square, diamond.
