Nawabi Korma

Ingredients
  Mutton 1 Pound
  Green ginger 1⁄2 Inch
  Coriander seeds 1 Tablespoon
  Black cumin 1 Teaspoon
  Cloves 4
  Brown cardamom 1
  Black peppercorns 4
  Salt 1 Tablespoon
  Almonds 2 Ounce
  Ghee 1 Cup (16 tbs)
  Onion 1 Large
  Bay leaves 4 Small
  Cayenne powder 1 Teaspoon
  Turmeric powder 1 Teaspoon
  Green cardamom 4
  Plain yogurt 2⁄3 Cup (10.67 tbs)
  Saffron 1⁄2 Teaspoon
  Light cream 2⁄3 Cup (10.67 tbs)
  Garam masala 1 Teaspoon
  Hot water 2⁄3 Cup (10.67 tbs)
Directions

GETTING READY
1)Make a paste of the ingredients in section A and marinate for an hour.
2)In a bowl, beat together cream and saffron.

MAKING
3)In a deep saucepan, heat ghee and sauté onion until golden. Remove half onion and keep it for later use.
4)Then, add bay leaves, cayenne, turmeric and cardamom in the pan and mix well. Cook for 2 minutes.
5)Add yogurt and cook on medium heat until moisture dries. Stir frequently.
6)Add mutton and stir. Add the saffron mixture, garam masala and fried onion. Pour water mix well and cover the pan and cook for 30 minutes.

SERVING
7)Serve Nawabi Korma with rice or chapatti.
