Toovar Dal with Vegetables by Tarla Dalal

Toovar Dal with Vegetables is a wholesome dish, full of vegetables and protein-rich dal. You need not stick to the veggies I have used -- just open your fridge and throw in anything you find. You will love the fact that such a tasty and sumptuous dish can be prepared with just about no oil! Remember to add the jaggery and tamarind, as they provide a much needed twist to cover up the plain taste of dal.

Ingredients

Toor dal 1/4 Cup (4 tbs) , soaked for 2 hours and drained (arhar)
Salt To Taste
Turmeric powder 1/2 Teaspoon
Yam chunks 1/4 Cup (4 tbs) (suran)
Raw peanuts 1 Tablespoon
Drumstick 2 , cut into 2
Curry leaves 6 (5
Grated jaggery 1 Tablespoon
Tamarind pulp 1 Tablespoon
Ginger green chili paste 1 Teaspoon
Finely chopped coriander 1 Tablespoon
Bhindi 1/4 Cup (4 tbs) , with edges trimmed (ladies finger)

Directions

MAKING

1. In pressure cooker, combine the toovar dal, 1 cup water, salt, turmeric powder, yam, peanuts and drumsticks. Mix well and cook for 2 whistles. Allow the steam to escape before opening the lid.

2. Pour 1 cup of water, mix well and mash with the back of a spoon.

3. Add curry leaves, jaggery, tamarind pulp, ginger-green chili paste, coriander and bhindi (ladies finger). Mix well and cook over low flame for 5-7 minutes, stirring occasionally.

SERVING

4. Serve hot with rice and parathas.
