Jeena Vengima Paneer Sathe Bhunjela ( Baked Baby Brinjals )

  Baby brinjals 12
  Punjabi paneer 200 Gram
  Cheese 150 Gram
  Milk 1⁄2 Liter
  Cornflour 2 Tablespoon
  Nutmeg powder 1⁄4 Teaspoon
  Butter 3 Tablespoon
  Sage 1 Pinch
  Salt To Taste

1. Soak the halved brinjals in salted water after scooping the flesh from the centre with a sharp knife.
2. Mix the cornflour in three tablespoons of water, add to the milk with two tablespoons of butter and cook over a medium flame till a thick white sauce or roux is made. Add 50 gms. cheese and taste for salt. Mix in the nutmeg powder and sage.
3. Remove the brinjal pieces from the salted water and pat them dry with a cloth. Stuff as much paneer as you can in each hollow. Cover with the sauce and sprinkle the grated cheese.
4. Grease a tray with the remaining tablespoon of butter and arrange the brinjal pieces on it. Heat oven to 375°F and place the brinjals in the oven after ten minutes. Bake till the brinjal topping is golden brown.
