Cucumber Roti

One of the tasty, healthy and easy to make Indian pancakes.
Ingredients
  Seedless cucumber 1
  Freshly grated coconut 2 Tablespoon
  Sugar 3 Tablespoon (adjust quantity as per taste)
  Salt To Taste
  Rava 1 Cup (16 tbs)
Directions

Finely grate the cucumber. Add coconut, salt, sugar and rava and mix them together. (The mixture will be thick. Do not add any water).
Pat a handful of the mixture on a hot greased tava. Cook until slightly brown.
Apply few drops of oil and flip it over and cook till slightly brown and crisp. Serve hot.

This looks nice Sarita. Haven't ever added cucumber to my pancakes. A healthy and different pancake recipe...will try it soon(pancakes are a staple diet at my place for breakfast).

The Taushe Doddak Cucumber Rotti looks like the veg dosa that many south indians make! This tastes yummy! I believe it tastes good with peanut chutney as well :)
