Padwal Chi Bhaji

Snake Gourd is a low calorie vegetable,rich in calcium.I have prepared this vegetable with combination of Val/Dalimbi Usal/Pavta.The combo used for this dish makes it a great hit!
Ingredients
  Padwal 1⁄2 Kilogram (Snake Gourd)
  Val 1 Cup (16 tbs), sprouted (Dalimbi Usal / Pavta)
  Turmeric powder 1⁄2 Teaspoon
  Red chilly powder 1 Teaspoon
  Mustard seeds 1⁄2 Teaspoon
  Coriander jeera powder 1⁄2 Teaspoon
  Oil 2 Teaspoon
  Onion 1 Small, chopped
  Salt To Taste
  Jaggery To Taste
  Asafoetida 1⁄2 Pinch
  Water 1⁄2 Cup (8 tbs)
For garnishing
  Coriander 1 Teaspoon, chopped
Directions

GETTING READY
1)Cut padwal and remove seeds from within.

MAKING
2)Heat oil add asafoetida and mustard seeds,let it splutter.Add onion,once it turns brown add padwal and val.
3)Add turmeric powder,red chilly powder,coriander-jeera powder and saute for 10 minutes.
4)Add little water and cook val adding salt and jaggery in it.
5)Garnish Padwal Chi Bhaji with chopped coriander.

SERVING
6)Serve Padwal Chi Bhaji with hot chapatti.
