English-Style Lamb Curry
|Onion||1⁄4 Cup (4 tbs), chopped|
|Apple||1⁄4 Cup (4 tbs), chopped|
|Butter||1⁄4 Cup (4 tbs)|
|Flour||2 1⁄2 Tablespoon|
|Chicken broth||1 Cup (16 tbs)|
|Half and half||1 Cup (16 tbs)|
|Cooked lamb||1 Pound, chopped|
|Curry powder||1 1⁄2 Teaspoon|
Saute onion and apple in butter in heavy skillet; blend in flour and salt.
Add chicken broth and half and half gradually, stirring constantly, until smooth and thickened.
Stir in lamb and curry powder; sim- mer, covered, for 15 minutes.
Serve over mound of rice.
