Gajar Mewa Nu Achaar ( Carrot And Dried Fruit Pickle )

Ingredients
  Grated carrots 4 Cup (64 tbs), grated
  Sugar 4 Cup (64 tbs)
  Garam masala 1 Teaspoon
  Cardamom powder 1⁄4 Teaspoon
  Nutmeg powder 1⁄4 Teaspoon
  Chili powder 3 Tablespoon
  Turmeric powder 1 Tablespoon
  Sugarcane vinegar 1 Tablespoon (Adjust To Taste)
  Seedless raisins 1⁄2 Cup (8 tbs)
  Dried apricots 1⁄2 Cup (8 tbs)
  Dried dates 1⁄2 Cup (8 tbs) (Kharak)
  Finely sliced dried garlic 2 Tablespoon
  Salt To Taste
Directions

1. Place the grated carrots in a heavy based pan. Add three to four cups of sugar and two to three cups of vinegar and cook over a slow fire. Keep stirring. Add the garlic.
2. If you need more vinegar to soften the carrots use it — a little at a time. When the carrots are soft, toss in the soaked dried fruit and bring to a boil. When the sauce thickens add the powdered spices. Stir the mixture well. Taste for sugar as well as salt. The pickle should be more sweet than sour. Remove from heat and cool.
3. Fill in clean glass bottles.
