Kakdi Chi Koshimbir

My children are very fond of cucumber.In our daily diet i make it a point to give them lots of salads. Kakdi Chi Koshimbir is one such famous dish in Maharashtrian cuisine.In most of the Maharashtrian homes you would find this koshimbir for lunch with lots of variations in it.
Ingredients
  Cucumber 1 Medium, finely chopped
  Green chillies 2 Small, finely chopped
  Peanut powder 2 Teaspoon
  Lemon juice 2 Teaspoon
  Salt To Taste
  Ghee 1 Teaspoon
For tempering
  Cumin seeds 1 Teaspoon
  Asafoetida 1⁄2 Pinch
For garnishing
  Coriander leaves 2 Teaspoon
  Lemon 1⁄2 Small
Directions

GETTING READY
1)Rub salt to finely chopped cucumber and set aside for 15 minutes.

MAKING
2)Mix the above cucumber with green chilly,peanut powder,lemon juice and sugar.
3)Heat ghee in a pan add asafoetida and cumin seeds,let it splutter.
4)Pour the above in cucumber mixture.
5)Garnish Kakdi Chi Koshimbir with coriander leaves and 1/2 lemon on top.

SERVING
5)Serve Kakdi Chi Koshimbir with any curry and chapatti.
