Couscous With Tomatoes

A simple, everyday meal that is healthy and rich in carbs and protein, eaten in good volumes.
Ingredients
  Couscous 1 Cup (16 tbs)
  Hot water 1 1⁄4 Cup (20 tbs)
  Onion 1⁄2 Small, finely chopped
  Olive oil 1 Tablespoon
  Mustard seeds/Urad dal 1 Pinch
  Cumin seeds 1 Pinch
  Curry leaves 4 Medium
  Green chillies 1 Medium, finely chopped
  Pepper 1 Pinch
  Salt 2 Pinch
  Turmeric 1⁄2 Teaspoon
  Sambhar powder 1 Teaspoon
  Lime juice 3 Drop
  Water 1⁄2 Cup (8 tbs)
  Tomatoes 1 Medium, chop
Directions

MAKING
1. In a bowl place the couscous and pour the hot water, cover and allow it to swell and become fluffy.
2. In pan pour olive oil and add mustard seeds, cumin, onions, curry leaves, salt, pepper, turmeric, sambhar powder, green chilies and tomatoes.
3. Stir everything well, and add lime juice and water, stir everything.
4. Add the couscous and mix everything until well combined.

SERVING
5. Serve the Couscous with tomatoes hot.
