Easy Bhindi

Ingredients
  Water 5 Cup (80 tbs)
  Okra 2 Cup (32 tbs), diced into 1/2 inch cylinders
  Onion 1 Medium, diced
  Oil 4 Tablespoon, divided
  Coriander powder 1 Teaspoon
  Cumin powder 1 Teaspoon
  Turmeric powder 1 Teaspoon
  Chili powder 1 Teaspoon
  Salt 1 Teaspoon
  Lemon juice 3 Tablespoon (or 1/2 tsp mango powder)
Directions

MAKING
1. In a pan heat 2 tbsp oil over medium heat coat okra in oil, and let it cook for 10-15 minutes-gently stirring occasionally for even cooking. (Reduce heat to medium-low if burners are too intense.)
2. In another pan over medium heat saute onions until brown.
3. Add all dry spices (except mango powder), salt, and stir.
4. Combine cooked okra, onion mixture and lemon juice/mango powder in the second pan.
5. Cook for a few more minutes if desired.

SERVING
6. Serve over roti and enjoy!
