Keri Mewa Nu Achaar ( Raw Mango And Dried Fruit Pickle )

Ingredients
  Raw mangoes 2 Kilogram
  White sugar 2 Kilogram
  Raisins 250 Gram
  Dried apricots 250 Gram
  Dates/Kharak / dried dates 250 Gram
  Chili powder 2 Tablespoon
  Powdered black pepper 2 Tablespoon
  Haldi powder 1 Teaspoon
  Sugar cane 1 Teaspoon
  Dried ginger 2 Tablespoon
  Vinegar 1 Teaspoon
  Dry garlic 2 Tablespoon
  Salt To Taste
Directions

1. Skin the raw mangoes and chop into two pieces. Remove the seed and cut into small cubes. Discard the seeds.
2. Soak all the dried fruit overnight, in a glass bottle full of vinegar.
3. Cut the ginger-garlic a day before and dry it in the sun.
4. Take a large vessel and place the mango pieces and sugar in it and place over a slow fire. Add half cup vinegar so that the sugar starts melting easily.
5. Cook the mangoes in the sugar mixture till soft. Then when the chutney is ready add the spices, chilli powder, dried fruits soaked in vinegar and the dried ginger-garlic. Simmer for fifteen minutes. Cool and bottle.
