Rice Pilau for Korma
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm)|
|Cinnamon stick||3 Inch|
|Rice grain||1 Pound|
|Warm water||1⁄3 Cup (5.33 tbs)|
|Light raisins||1⁄2 Cup (8 tbs)|
|Dates||1⁄2 Cup (8 tbs)|
|Blanched almonds||1⁄3 Cup (5.33 tbs)|
|Pistachio nuts||1⁄2 Cup (8 tbs)|
Melt butter or margarine, and saute' onion, garlic, whole spices and allspice 5 minutes; remove whole spices.
Add rice, and stir over low heat 5 minutes or until golden.
Add salt, saffron and sufficient water to cover rice by 2 inches.
Cover tightly, and steam over heat about 25 minutes or until rice is tender and water is absorbed.
Stir in raisins, dates and nuts.
