Mixed Vegetable Curry Healthy Version

Ingredients
  Paneer 1 Cup (16 tbs)
  Carrot 1 Medium
  Tomatoes 5 Medium
  Broccoli 1 Cup (16 tbs)
  Onions 1 Cup (16 tbs), sliced vertically
  Cauliflower 1 Cup (16 tbs)
  Cumin powder 1 Teaspoon
  Coriander powder 1 Teaspoon
  Turmeric powder 1 Teaspoon
  Chili powder 1 Teaspoon (use as per taste)
  Sugar 1 Teaspoon
  Salt 2 Teaspoon (use as per taste)
  Mustard 1 Teaspoon (For the tempering)
  Bengal gram 1 Teaspoon (For the tempering)
  Black gram 1 Teaspoon (For the tempering)
  Olive oil 1 Teaspoon (For the tempering)
  Basil leaves 4 Small (For garnish)
Directions

GETTING READY
1. Blend tomatoes and sugar together.
2. Add some water to make a smooth paste.

MAKING
3. In a pan heat olive oil and splutter the tempering mix.
4. Add the onions and sauté.
5. Once onions are cooked add tomato puree and cook until the tomatoes leave the raw flavor.
6. Add cumin, coriander powder, turmeric and chili powder.
7. Add the remaining veggies and cook.
8. Add salt to taste and pour half a cup of water.
9. Cover with a lid and let it cook for about 15 minutes or until the veggies are well cooked.

SERVING
10. Serve in a plate with a garnish of basil leaves.
