For browning the onions
  Vegetable oil 2 Tablespoon
  Onions 1⁄2 Medium, diced finely
The dry spices
  Ground coriander 2 Teaspoon
  Brown sugar 1⁄2 Teaspoon
  Red chili powder 1⁄2 Teaspoon
  Cumin seeds 1⁄2 Teaspoon
  Ground cumin 1⁄2 Teaspoon
  Turmeric 1 Teaspoon
  Garam masala 1 Teaspoon
The rest of the spices
  Garlic onion ginger paste 2 Teaspoon
  Ginger slices 3 Medium, julienned
  Curry leaves 12 Medium (10 - 12 leaves used) (Optional)
  Tamarind paste 1⁄2 Teaspoon
  Tomato paste 1 1⁄2 Tablespoon
  Tomatoes 1 Medium, diced
The rest of the ingredients for the chana masala
  Green chilies 2 Medium, minced (Adjust to your taste)
  Chickpeas 540 Milliliter (One can used)
  Water 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Fresh lime juice 1 Tablespoon (Juice from 1/2 a lime)
For the garnish
  Fresh coriander leaves 1 Tablespoon, chopped (As needed)
  Fresh ginger 1 Teaspoon, julienned (As needed)

1. Heat vegetable oil in the stove, when hot add the onions and brown them.
2. When browned, add all the dry spices and saute for a minute.
3. Next, add the rest of the spices along with the tomatoes, stir well. Turn down the heat to medium low and let cook for a couple of minutes.
4. Add the green chilies and the chickpeas, stir to incorporate all the spices with the chickpeas. Cover and let cook on medium-low for 7 minutes.
5. After 7 minutes, pour water. Cover and cook again for another 8 minutes. Add salt and stir.

6. Garnish with freshly chopped coriander leaves and julienned ginger. Serve warm with roti, chappati or naan. You may even serve with rice.
