Indian Summer Chicken and Rice Salad
|Water||2 Cup (32 tbs)|
|Instant rice||2 Cup (32 tbs) (UNCLE BEN'S Brand)|
|Thinly sliced zucchini||1⁄2 Cup (8 tbs)|
|Thinly sliced yellow summer squash||1⁄2 Cup (8 tbs)|
|Boneless skinless chicken breasts||1 Pound (4 pieces)|
|Creamy italian salad dressing||2⁄3 Cup (10.67 tbs), divided|
|Tomatoes||2 , chopped|
1 In a pan, bring water to a boil.
2 Add in rice, zucchini and summer squash.
3 Remove from the heat and allow to stand for 5 minutes.
4 Let cool.
5 Meanwhile, brush the chicken with 2 tablespoons salad dressing.
6 Grill or broil for 20 to 25 minutes or until the chicken is no longer pink in center, turning once.
7 Diagonally slice the chicken.
8 In a bowl, combine the rice mixture with the remaining salad dressing.
9 Transfer to a serving platter and serve surroundded with tomatoes and topped with chicken.
