Lamb Curry With Apricots

Ingredients
  Dried apricots 6 Ounce (1 Package)
  Hot water 2 Cup (32 tbs)
  Vegetable cooking spray 1
  Lean boneless lamb 1 Pound, cut into 1 inch cubes
  Onion 1 Medium, chopped
  Garlic 2 Clove (10 gm), minced
  Chicken flavored bouillon granules 1 Teaspoon
  Hot water 1 Cup (16 tbs)
  Ground coriander 1 Teaspoon
  Ground cumin 1⁄2 Teaspoon
  Ground ginger 1⁄2 Teaspoon
  Ground turmeric 1⁄2 Teaspoon
  Red pepper 1⁄8 Teaspoon
  Ground cardamom 1⁄8 Teaspoon
  Hot cooked parboiled rice 2 Cup (32 tbs), cooked without salt or fat
Directions

GETTING READY
1) In a small bowl, combine apricots and 2 cups hot water.
2) Keep aside.
3) Take a Dutch oven and coat it with cooking spray.

MAKING
4) Add lamb, and cook, stirring frequently, until browned on all sides.
5)Remove lamb, and drain on paper rowels.
6) In Dutch oven, add onion and garlic, and saute until render.
7) Return lamb to Dutch oven.
8) Combine bouillon granules and 1 cup hot water; add to Dutch oven.
9) Add coriander and next 6 ingredients.
10) Bring to a boil; cover, reduce heat, and simmer 30 minutes.
11) Drain apricots; add to lamb mixture, and simmer an additional 30 minutes.

SERVING
12) Serve the lamb curry with apricots over hot cooked rice.
