|Rice||1 Cup (16 tbs)|
|Lemon||1 Large, juiced|
|Turmeric powder||1 Teaspoon|
|Groundnuts||1⁄4 Cup (4 tbs)|
|Cashews||6 , chopped|
|Mustard seeds||1⁄2 Teaspoon|
|Cumin seeds||1 Teaspoon (jeera)|
Cook 1 cup Rice, add turmeric powder in 1 tbs oil & mix this well in rice. Keep aside.
In a shallow pan, heat 3 tbs oil, when hot, add mustard seeds. Allow them to splutter. Then add cumin seeds, curry leaves, red & green chillies, groundnuts & chopped cashews & saute until cashews turn light brown.
Add the above seasoning to Rice. Squeeze juice of 1 big lemon or 2 medium sized lemons. Add salt & Mix well.
Lemon juice can be substituted with 2 tbs of Tamarind pulp. The seasoning remains the same.
