Lamb Curry with Fruit
|Lean leg of lamb||1 1⁄2 Pound, cut into 1-inch cubes|
|Onion||1 Medium, sliced|
|Lemon juice||1⁄2 Cup (8 tbs)|
|Canned condensed chicken broth||1 Cup (16 tbs), undiluted|
|Green apple||1 Medium|
|Canned pineapple chunks||5 1⁄4 Ounce, drained (1 can)|
1 In a medium bowl, add 1 tablespoon flour, the curry and salt; mix well.
2 Mix in the lamb cubes, and gently toss to coat evenly.
3 In a large skillet, add oil or butter and heat.
4 Add in the lamb cubes in a single layer and saute over high heat, turning to brown all the sides for 10 minutes.
5 Add in the sliced onion, and cook for a few minutes. remove from the heat.
6 In the meantime, pare and core the apple and cut into 1/2 inch pieces.
7 Cut banana into 1-inch chunks.
8 In the skillet, combine fruits and chutney and bring just to a boil.
9 Serve with rice.
