Curried Lentils with Fruit
|Uncooked lentils||1 1⁄2 Cup (24 tbs), rinsed, sorted and drained|
|Granny smith apple||1 , cored, peeled and chopped|
|Golden raisins||1⁄4 Cup (4 tbs)|
|Nonfat lemon yogurt||1⁄4 Cup (4 tbs)|
|Curry powder||1 Teaspoon|
1. Combine 2 quarts water and lentils in large saucepan; bring to a boil over high heat. Reduce heat to medium-low. Simmer 20 minutes, stirring occasionally.
2. Stir apple and raisins into saucepan; cook 10 minutes or until lentils are tender. Drain lentil mixture; discard liquid.
3. Place lentil mixture in large serving bowl; stir in yogurt, curry powder and salt until well blended. Garnish as desired.
