Cucumber And Tomato Raita
|Onion||1 Small, minced|
|Tomatoes||2 , cut into 1/4-inch dice|
|Tomatoes||2 , cut into 1/4 inch dice|
|Minced fresh coriander||1 Tablespoon (cilantro)|
|Cayenne pepper||1⁄8 Teaspoon|
|Low fat yogurt||1 Cup (16 tbs)|
|Plain low fat yogurt||1 Cup (16 tbs)|
1. Peel, seed and cut the cucumber into 1/4-inch dice. Mix it with the salt and let stand 15 minutes, then squeeze out excess water. Place the cucumber in a medium bowl.
2. Add the onion, tomatoes, fresh coriander, cayenne and yogurt and mix well. Chill for 1 or 2 hours to let the flavors combine.
