Cucumber And Tomato Raita

Ingredients
  Cucumber 1 Large
  Salt 1 Tablespoon
  Onion 1 Small, minced
  Tomatoes 2 , cut into 1/4-inch dice
  Tomatoes 2 , cut into 1/4 inch dice
  Minced fresh coriander 1 Tablespoon (cilantro)
  Cayenne pepper 1⁄8 Teaspoon
  Low fat yogurt 1 Cup (16 tbs)
  Plain low fat yogurt 1 Cup (16 tbs)
Directions

1. Peel, seed and cut the cucumber into 1/4-inch dice. Mix it with the salt and let stand 15 minutes, then squeeze out excess water. Place the cucumber in a medium bowl.
2. Add the onion, tomatoes, fresh coriander, cayenne and yogurt and mix well. Chill for 1 or 2 hours to let the flavors combine.
