Aloo Ka Halwa

Warm saffron powder and soak in milk.
Add 2 cups water to sugar and make a light syrup.
Boil and peel potatoes.
Crush them and add them to the syrup.
Place pan over a low flame and mash the potatoes into a smooth mixture.
Add ghee, saffron and mawa and continue stirring and cooking until mixture comes off the sides of the pan.
Remove pan from fire and spread mixture on a greased surface or thali.
Sprinkle nuts and melon seeds.
When cool, cut into squares.
