Hot and Spicy Spinach
|Red bell pepper||1 , cut into 1-inch pieces|
|Garlic||1 Clove (5 gm), minced|
|Fresh spinach||1 Pound, prewashed, rinsed and chopped|
|Prepared mustard||1 Tablespoon|
|Lemon juice||1 Teaspoon|
|Red pepper flakes||1⁄4 Teaspoon|
1. Spray large skillet with nonstick cooking spray: heat over medium heat. Add red bell pepper and garlic; cook and stir 3 minutes.
2. Add spinach; cook and stir 3 minutes or just until spinach begins to wilt.
3. Stir in mustard, lemon juice and red pepper flakes. Serve immediately.
