Chicken In Yogurt Curry
|Vegetable oil||1⁄2 Cup (8 tbs)|
|Onions||2 Medium, peeled and chopped|
|Dried red chilies||4 (Whole Ones)|
|Whole dried red chilies||4|
|Chicken drumsticks and thighs||5 1⁄2 Pound|
|Fresh ginger root piece||1 Inch, peeled and grated|
|Plain yoghurt||1 1⁄2 Cup (24 tbs)|
|Freshly ground black pepper||1 Tablespoon|
Heat the oil in a large heavy-based frying pan or saucepan over medium heat.
When hot, add the onions, chiles, and cloves, and cook, stirring frequently, until the onions brown.
Add the chicken and ginger and stir continually until the meat is seared on all sides.
Mix the yogurt and 1 cup water together and add them to the pan with salt and pepper.
Cover and cook over medium-low heat, stirring occasionally, for 1 hour.
Serve with Savory Onion Rice and Dressed Green Salad.
