Besani Aloo

Cubes of Potato, simmered in a moderate spice gram flour/ Besan gravy.
Ingredients
  Potatoes 4 Medium
  Oil 1 Tablespoon
  Mustard seeds 1 Teaspoon
  Cumin seeds 1 Teaspoon
  Garlic 4 Clove (20 gm), finely chopped
  Onions 1 Medium, finely diced
  Asafoetida 1 Pinch (Hing)
  Ginger 1⁄2 Inch, finely chopped
  Gram flour 1⁄3 Cup (5.33 tbs)
  Water 1 Cup (16 tbs) (As Required)
  Turmeric powder 1⁄2 Teaspoon (Haldi)
  Chili powder 1 Teaspoon
  Coriander powder 1 Teaspoon (Dhania)
  Garam masala powder 1 Teaspoon
  Salt To Taste
  Crushed black pepper To Taste
  Chopped fresh coriander 1 Tablespoon
  Lemon juice 1 Teaspoon
Directions

GETTING READY
1. Pressure cook potatoes for 3 whistles or till well cooked.
2. Once cooled, peel and cut into cubes. You can alternatively coarsely crush/ mash with hands. Keep aside.
3. In a small bowl, which besan with 1 cup water and keep aside.

MAKING
4. In a medium sized pan/ kadhai, heat oil.
5. Add mustard seeds.
6. Once they crackle, add cumin seeds.
7. Once they splutter, add onions, garlic, ginger, curry leaves and hing.
8. Mix well and sauté on a medium flame for 5 to 7 minutes till onions turn translucent.
9. Add turmeric powder, chilli powder, dhania powder and black pepper.
10. Mix well and add cubed potatoes.
11. Coat well in masala and cook for 2 minutes.
12. Add diluted besan, garam masala and salt.
13. Mix well, reduce flame and simmer and cook for 8 to 10 minutes or till gravy thickens. You may add some more water, if gravy is too thick.
14. Off flame, add coriander leaves and lemon juice and mix well.

SERVING
15. Serve with rotis/ parathas/ naan or steamed rice.

Story
Long day at work and a meal to make at home.......at such times, i prefer to have a single dish which can go with two accompaniments atleast. At least that way I feel i have had a good meal. Best way to achieve that would be to make a gravy...have it roti..have it with rice...and u r done..:) Besani Aloo is one such example...a simple recipe...subtle flavours and no tension ingredients to deal with.
