Vegetable Sooji Sandwich

Excellent Sooji Sandwich recipe with lots of veggies.
Ingredients
  Sourdough bread slices 20 , crusts removed (White / Whole Grain)
  Yogurt 1 Cup (16 tbs)
  Semolina 1 Cup (16 tbs) (Sooji)
  Baking soda 1⁄8 Teaspoon
  Peas 1⁄2 Cup (8 tbs)
  Corn kernels 1⁄2 Cup (8 tbs)
  Cilantro leaves 1 Cup (16 tbs), chopped
  Thai green chili 1 Small, diced
  Carrots 2 , grated
  Tomato 1 , diced
  Red onion 1⁄2 Medium, diced
  Cumin powder 1⁄2 Teaspoon, toasted
  Salt 1⁄4 Teaspoon
  Mustard seeds 1 Teaspoon
Directions

Batter
In a large mixing bowl, mix yogurt and semolina with mixing spoon
Add in all veggies and gently mix
Stir in salt and baking soda
Sandwich Prep
Spread batter on one side of bread
Repeat with remaining slices
Cook
Heat sauté pan (or other flat surfaced low-sided pan), on medium-hi
Add oil
Once oil is warm, add ¼ tsp mustard seeds
Once you hear them pop, lay your sandwich, batter side down, onto the pan
Reduce heat to medium and cook for 3-5 minutes
Flip over and cook for an additional 3-5 minutes
Repeat if necessary
8. Serve with chutney (or ketchup) and enjoy!!
