Indian Bell Pepper and Potato Stir Fry

Bell peppers are referred to as “shimla mirch” in Hindi (not ghanti mirch as you might think). Traditionally, this sabzi is made with green bell peppers. You can use any variation you like. Red bell peppers are really good for you as I discuss in the video, so I highly recommend them. I used to make this dish in college all the time. I distinctly remember two things from the day I made it for my visiting parents and cousin. 1-I jumped up and bumped my head on a cabinet since I was so excited that the sabzi I made was actually edible. 2-My cousin Bobby politely told me that bangs were not my thing by saying, “they make your face look like an apple.”
  Ghee/Oil 2 Tablespoon
  Bell peppers 3 , cut into 2 inch long strips (Red, Green, And Yellow Or Any Combination)
  Golden potatoes 2 , cut into 2 inch long pieces
  Green chili 1 , diced
  Cumin seeds 1⁄2 Teaspoon
  Coriander 1⁄2 Teaspoon
  Turmeric 1⁄2 Teaspoon
  Chili powder 1⁄4 Teaspoon
  Amchoor powder/2 teaspoon lemon juice 1⁄2 Teaspoon (Mango Powder)
  Salt 1⁄4 Teaspoon (Or To Taste)

In a large frying pan, heat ghee on medium, add cumin seeds
As soon as seeds start to pop, mix in coriander, turmeric, and chili powder
Immediately add bell peppers, potatoes, green chili, and salt
Cover and cook over a moderate heat for about 20 minutes, stir it once in about 7 minutes to ensure even cooking
If vegetables have let off water, uncover and cook until water evaporates
Stir in amchoor or lemon juice
Serve and enjoy!
