Madras Curried Meatballs

  Soft bread crumbs 1 Cup (16 tbs)
  Ground chuck 2 Pound
  Salt 1 1⁄2 Teaspoon
  Ginger 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Butter 2 Tablespoon
  Curry powder 2 Teaspoon
  Onion 1⁄2 Cup (8 tbs)
  Garlic 1 Clove (5 gm)
  Tart apple 1 Cup (16 tbs)
  Ginger 3⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  All purpose flour 1⁄4 Cup (4 tbs)
  Canned fruits 17 Ounce
  Canned chicken broth 10 1⁄2 Ounce
  Lemon juice 2 Tablespoon
  Curry powder 4 Tablespoon

1) In a large bowl, mix the breadcrumbs, ½ cup of water, the chuck and 2 teaspoons of the curry powder, beef with the salt and pepper
2) Also add in salt, ½ teaspoon of ginger, ¼ teaspoon of pepper
3) Using a fork lightly blend the mixture together till combined
4) Using the hands shape the meat mixture into 16 meatballs
5) In a Dutch oven, fry the meatballs till evenly browned all over
6) Using a slotted spoon, remove them onto absorbent paper
7) In the remaining beef drippings tip in the onions, garlic, apple, curry powder, ginger, salt and pepper and sauté till tender
8) Tip in the onions and sauté till light brown
9) Remove the onions from the pot and then add in the flour and 2/3 cup of fruit juice and the chicken broth
10) Cook till thickened
11) Lower the flame and cover with the lid and allow to simmer for about 10 minutes
12) Return the meatballs to the pot

12) Serve warm over a mound of rice and some fruit and meatballs topped
