Spiced Savory Rice

Ingredients
  Long grain rice 1 Pound
  Green pepper 1 , deseeded
  Tomatoes 2 , deseeded
  Raisins 2 Tablespoon
  Onion 1 Small
  Pineapple 3⁄4 Can (7.5 oz), drained and juice reserved
  Oil 1⁄2 Cup (8 tbs)
  Vinegar 3 Tablespoon
  Lemon 1⁄2 , juiced
  Pineapple juice 1 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Sugar 1 Teaspoon
  Curry powder 1 Teaspoon
  Ginger 1⁄2 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1. In a saucepan, cook the rice till soft, rinse under cold water and drain completely
2. Chop the peppers, tomatoes, onions and pineapple into small pieces and add to the rice along with the raisins
3. In a saucepan, combine oil, vinegar, lemon and pineapple juice, garlic, sugar, curry powder, ginger and seasonings
4. Spoon it over the rice and mix well

SERVING
5. Serve immediately
