Lentil Corn Pilaf
|Water||2 Cup (32 tbs)|
|Dried lentils||8 Ounce, sorted, rinsed (1 Cup)|
|Chopped red bell pepper||1⁄2 Cup (8 tbs)|
|Frozen whole kernel corn/Canned drained whole kernel corn||1 Cup (16 tbs), thawed|
|Chopped fresh cilantro/Chopped fresh parsley||2 Tablespoon|
|Chili powder||1⁄2 Teaspoon|
1 In a 2-quart saucepan boil water. Stir in lentils and bell pepper.
2 Cover and simmer for 15-20 minutes or until lentils are tender.Drain if necessary.
3 Stir in the remaining ingredients and cook over low heat for 2-3 minutes,stirring occasionally until corn is tender and hot.
4 Serve hot.
