Curried Mushroom Rice

Ingredients
  Chicken broth 2 Cup (32 tbs)
  Margarine 1 Tablespoon (diet)
  Onions 1 Cup (16 tbs), chopped
  Garlic 1 Clove (5 gm), minced
  Rice 1 Cup (16 tbs), uncooked
  Sliced mushrooms 4 Ounce, drained
  Curry 1 Teaspoon
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Lemon juice 1 Tablespoon
Directions

MAKING
1) Using bulb-type baster skim broth. Alternately chill mixture till fat floats on top and whisk it away.
2) In a nonstick skillet melt margarine.
3) sauté onions and garlic till tender.
4) Add rice, broth, mushrooms, seasonings, and lemon juice.
5) Boil mixture, cover the pan, reduce heat and simmer about 15 minutes till rice is tender.
6) Fluff the rice lightly with a fork.

SERVING
7) Serve hot.
