|Seeded raisins||2 Ounce, chopped|
|Fine coconut||2 Ounce|
|Candied mixed peel||1 Ounce, finely chopped|
|Vanilla/Almond, essence||1⁄2 Teaspoon|
|Glace cherries||1 Ounce|
Melt the butter, stir in the semolina and brown slightly.
Add fruit, coconut and essence.
Boil the sugar and water until thick and syrupy, removing from heat before it changes colour.
Stir in semolina mixture and cook over a low heat, stirring until thick.
Pour into a greased dish and allow to set.
