Ingredients
  Red pepper flakes 2 Tablespoon
  Cinnamon sticks 2 1⁄2
  Coriander seeds 2 1⁄2 Tablespoon
  Cumin seeds 1 1⁄4 Tablespoon
  Cardamom 1 1⁄2 Teaspoon
  Peppercorns 1 1⁄2 Teaspoon
  Cloves 1 Teaspoon
  Lime juice 5 Tablespoon
  Finely chopped gingerroot 5 1⁄2 Tablespoon
  Finely chopped garlic 5 1⁄2 Tablespoon
  Cider vinegar 2 1⁄4 Cup (36 tbs)
  Onions 2 1⁄2 Pound, sliced
  Ghee 9 1⁄2 Tablespoon
  Cubed pork 5 Pound
  Water 3 1⁄2 Cup (56 tbs)
  Peppers 2
  Salt To Taste
  Pepper To Taste
Directions

Preheat oven to 350 degrees.
Sprinkle red pepper flakes, cinnamon sticks, coriander seeds, cumin seeds, cardamom, peppercorns and cloves on baking sheet.
Toast for 3 to 4 minutes or until cumin seeds pop.
Cool; grind.
Puree lime juice, gingerroot, garlic and vinegar in blender.
Combine with toasted spices in bowl; mix well.
Saute onions in ghee in saucepan until brown.
Stir in spice mixture.
Cook until liquid evaporates and ghee separates, stirring frequently.
Add pork; mix well.
Cook for 5 minutes, stirring constantly.
Add water; mix well.
Bring to a boil; reduce heat.
Simmer for 45 minutes or until pork is tender, stirring occasionally.
Season with salt and pepper.
Garnish with chili peppers.
Serve with hot cooked rice.
