STUFFED BRINJAL SHELLS

Ingredients
  Brinjals 3 (Long Shaped)
  White sauce 1 Cup (16 tbs)
  Breadcrumbs 1 Cup (16 tbs)
  Grated cheese 1⁄4 Cup (4 tbs)
  Melted butter 2 Tablespoon
Directions

Wash and cut the brinjals lenthwise and fry in hot oil.
Place in oven dish cut side up.
Press the pulp down well in the centre of, each half and sprinkle with salt and pepper.
Place stuffing on brinjals to cover pulp, and pour the sauce over.
Sprinkle with grated cheese, breadcrumbs and melted butter.
Bake in hot oven for about 30 minutes.
