  Brinjal 4 (Small Ones)
  Fried chopped onion 2 Tablespoon
  Chopped red pepper 1 Tablespoon
  Chopped basil 1 Tablespoon
  Garlic clove 2 , mashed
  Fresh bread crumbs 2 Ounce
  Chopped walnut 4 Tablespoon
  Chopped parsley 3 Tablespoon
  Oil 1⁄4 Cup (4 tbs) (For Frying)

Cut the ends from small brinjals but do not peel.
Saute them in oil then cut-them in half lengthwise.
Take out the flesh carefully and chop finely.
Mix well with slightly fried chopped onion, chopped red pepper, 1 tblspn, chopped basil, 2 mashed cloves garlic, 2 oz.
fresh brown breadcrumbs, 2 oz.
chopped walnuts and 3 tblspns, chopped parsley.
Fill the brinjal skins with this mixture, arrange them close together in an oven dish' and sprinkle them with a few tblspn of oil.
Cover the dish and cook them in a moderate oven for 15 minutes.
