Place bacon and onion in 12-oz casserole [22-oz casserole].

Stir in remaining ingredients except peanuts and tomatoes.
Cover with vented plastic wrap and microwave 1 min [2 min]; stir.
Cover with vented plastic wrap and microwave until water is absorbed, 1 to 2 min [2 to 3 min].
Sprinkle with peanuts and tomatoes.
