Kanda Kothmir Per Eeda
|Coriander leaves||1 Tablespoon|
|Ginger piece||1 Inch|
|Garlic||6 Clove (30 gm)|
Heat oil in a frying pan large enough to hold eggs and vegetable mixture.
Fry onions till light brown.
Add ginger and garlic and fry for one minute.
Add coriander leaves and chillies and saute for another minute.
Spread mixture evenly in pan and make depressions in it.
Lower heat, break eggs in depressions and sprinkle with salt.
Cover pan with an inverted lid.
Pour water on lid and cook on low heat till eggs are set.
