Papaya And Carrot Halwa

Ingredients
  Carrots 500 Gram (juicy orange)
  Papaya 500 Gram (firm not so ripe)
  Milk 1 1⁄2 Liter
  Sugar 500 Gram
  Ginger 1 Inch, cut into thin shreads or finely chopped
  Cardamom powder 1⁄2 Teaspoon (elaichi powder)
  Strands of saffron 5
  Ghee 3 Tablespoon
Directions

Peel and grate carrots and the papaya
Put milk and carrots and papaya in a heavy saucepan.
Boil till thick, stirring occassionally.
Once it starts thickening, stir continuously. Add sugar and cook further till thickens.
Add ghee, elaichi, saffron,ginger and colour.
Stir on low heat till the mixture collects in a soft ball or the
ghee oozes out.
Serve hot, decorated with a chopped almond or pista.

hi let me know when u tried it make sure the papaya is really hard and red inside but not ripe this is the perfect stage to use the papaya for this recipe

ok... the ripeness of this fruit is bewildering. i use unripe (white meat) papaya for thai salads. i use the ripe/sweet meat for salsa and chutney... Now you tell me to find one that is in between??!!! How do i know this at the store for pete's sake? And does "raw papaya" in most recipes refer to the white unripened fruit usually?? HELP ME OUT HERE.......
