Red Pepper Raita
|Sweet peppers||2 Small, very finely chopped|
|Spring onions||4 , very finely chopped|
|Mint leaves||8 , chopped|
|Coriander leaves||8 , chopped|
|Greek yoghurt||500 Milliliter|
Put the red peppers and onions on a serving plate. Sprinkle the top with the herbs.
Pour the yoghurt into a large bowl. Add a little salt and the mace, then beat with a fork for 2 minutes to aerate the mixture. Check the seasoning and add salt and pepper if needed.
Pour the yoghurt sauce over the peppers and the onions. Serve very cold. If the salad is ready before it is needed, cover the dish with clingfilm and keep it in the refrigerator.
