Brinjal Methi And Aloo Sabzi

Ingredients
  Brinjal 3 , chopped and put inside water
  Aloo 2 Large, chopped and put inside water
  Fenugreek leaf 1 Cup (16 tbs), washed and finely chopped
  Ginger garlic paste 1 Teaspoon
  Onion 1 , finely chopped
  Tomato 1 , finely chopped
  Salt To Taste
  Water 1⁄2 Cup (8 tbs) (adjust the quantity of water as needed)
  Sambhar powder 1 Teaspoon
  Oil 1 Teaspoon
  Mustard seeds 1 Teaspoon
Directions

In a pan add oil,when it is hot add mustard seeds.
When it starts to splutter add onion and fry till golden brown.
Then add methi leaves,ginger and garlic paste and fry till it turns soft.
Now add brinjal,aloo,tomato,water and allow themto cook and tomato become mashy.
Then add sambar pd,salt and adjust the salt.
When it is ready serve with hot chapati,nan,rice.............
