Pani Nu Achar
|Raw mangoes||5 Kilogram (small size)|
|Sea salt/Rock salt||1 Kilogram, crushed|
|Powdered alum||15 Gram|
Wash and dry mangoes.
Mix with alum and some salt.
In a large jar, place a layer of salt and alternate layers of mango and salt till jar is full, making sure it is tightly packed.
After a week, open jar, remove water and discard any mangoes that may have gone bad, replacing with fresh mangoes and more salt, if required.
Keep for one and a half months, shaking jar every 2-3 days and turning the mangoes over.
