Keri Ni Rus Ni Kadhi - Gujarati Green Mango Curry
|Curds||1 Cup (16 tbs), beaten|
|Water||2 Cup (32 tbs)|
|Green chilies||4 , seeded and chopped|
|Gram flour||2 Tablespoon|
|Turmeric powder||1⁄2 Teaspoon|
|Chili powder||1 Teaspoon|
|Ginger powder||1 Teaspoon|
|Mustard seeds||1 Tablespoon|
Press mangoes between your hands to soften them and then cut off tops.
Squeeze out pulp and remove remaining pulp by scraping with a spoon.
Sieve or liquidise pulp and pour into a pan.
Beat curds with water and add to mango pulp with slaked gram flour.
Stir well and add remaining ingredients except seasoning.
Place pan on heat and bring to boil, stirring continuously.
Remove from heat.
Heat ghee in a small frying pan and fry seasoning ingredients for one minute.
Add to kudhi.
Stir well and remove from heat.
Serve with white rice and papads.
