Stir Fried Indian Spiced Cauliflower
|Extra virgin olive oil||1 Tablespoon|
|Carrots||3 , diagonally sliced|
|Celery ribs||2 , finely chopped|
|Onion||1 Small, finely chopped|
|Cumin seeds||2⁄3 Teaspoon, crushed|
|Minced fresh ginger||3 Tablespoon|
|Ground coriander||1 Tablespoon|
|Ground red pepper||1⁄4 Teaspoon|
|Cauliflower head||1 , cut into florets|
|Canned chickpeas||15 1⁄2 Ounce, rinsed and drained (1 Can)|
Heat the oil in a large nonstick skillet over medium-high heat.
Add the carrots, celery, and onion and cook, stirring constantly, for 5 minutes.
Add the cumin seeds, ginger, coriander, salt, and pepper and cook, stirring constantly, for 2 minutes.
Add the cauliflower.
Reduce the heat to medium-low and cook, stirring occasionally, for 10 minutes, or until the cauliflower begins to brown.
