Masala Chops

Ingredients
  Lamb chops 750 Gram
  Cinnamon stick 1⁄2 Inch
  Cloves 2
  Green cardamoms 2
  Black peppercorns 5
  Coriander seeds 1 Teaspoon
  Cumin seeds 1⁄2 Teaspoon
  Onion 1 Small, chopped
  Ginger 1 Inch
  Garlic 6 Clove (30 gm)
  Unripe papaya piece 2 Inch
  Fat free curd 2 Tablespoon, whisked (Made Out Of Fat Free Milk)
  Red chili powder 1 Teaspoon
  Salt 1 Teaspoon
  Lime juice 1 Teaspoon
  Oil 1 Teaspoon
  Mango powder 1 Teaspoon (Amchur)
Directions

Ask your butcher to cut 2 chops per portion.
Do not beat to tenderise.
Wash chops and pat dry.
Heat a dry pan over moderate heat and roast whole spices individually for a few moments till fragrant.
Place whole spices in a blender with onion, ginger, garlic and papaya and blend till smooth.
Transfer spices to a small piece of muslin cloth and squeeze out all the juices into a small bowl.
Discard spices.
Mix curd with strained juice, chilli powder, salt, lime juice and oil.
Pour over chops and marinate for least 12 hours.
Heat a barbeque or grill till medium-hot.
Place chops on rack and grill for 15-20 minutes, basting 2-3 times with marinade.
Turn chops after about 10 minutes.
Sprinkle with mango powder and serve hot with whole-wheat roti.
