Ingredients
  Cucumber 1⁄2 , diced
  Tomatoes 2 , deseeded and diced
  Onion 1 , diced
  Carrot 1 , diced
  Fresh green chilies 1 , sliced
  Chopped fresh coriander 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Lemon juice 2 Tablespoon
  Fresh mint sprigs 1 (For Garnish)
Directions

1. Place the cucumber, tomatoes, onion, carrot, chilli and fresh coriander in a serving bowl, sprinkle with the salt and lemon juice and toss together. Garnish with mint sprigs and serve immediately.
