Garam Masala Indian Spice Mixture
|Cinnamon||4 (3 Inch Each)|
|Cardamom pod||3⁄4 Cup (12 tbs)|
|Whole cloves||3 Tablespoon|
|Cumin seeds||6 Tablespoon|
|Whole coriander seeds||3 Tablespoon|
|Whole black peppercorns||3 Tablespoon|
Preheat oven to 200°F.
Spread out spices in one layer on cookie sheet and roast for 20 minutes in preheated oven.
Shake pan every 5 minutes to keep spices from browning.
Break open cardamom pods, remove seeds, discard pods.
Crush cinnamon sticks with a rolling pin.
Put all spices into electric blender and grind until spices are powdered.
Stop blender every 30 seconds or so to stir spice mixture, then grind again, until mixture is uniformly ground.
Store in an airtight jar.
