Ingredients
  Basmati rice 2 Cup (32 tbs), rinsed and drained
  Eggplant 1 Large, cut in 2.5 cm pieces
  Cauliflower florets 12
  Potato 1 Large, peeled, cut into 2.5cm cubes
  Safflower oil 1⁄4 Cup (4 tbs)
  Garam masala 2 Teaspoon
  Cumin powder 2 Teaspoon
  Coriander powder 2 Teaspoon
  Chili powder 1⁄2 Teaspoon
  Desiccated coconut 1 Tablespoon
  Turmeric 1 Teaspoon
  Chopped fresh coriander 1⁄2 Teaspoon
  Natural yogurt 2 Tablespoon
  Boiling water 4 Cup (64 tbs)
  Chopped fresh coriander 1 Tablespoon (For Garnish)
Directions

Heat oil in pan, over medium heat.
Add all ingredients, except water, stir for 1 minute.
Add boiling water, add salt to taste, bring to boil, cover, simmer on low until all the water is absorbed (approx 20-25 mins ) and rice is cooked.
