Tamatar Per Eeda

Ingredients
  Eggs 8
  Onions 4 , finely sliced
  Ginger piece 1 1⁄2 Inch, ground
  Garlic pod 1 Medium, ground
  Turmeric powder 1⁄2 Teaspoon
  Chili powder 1 Teaspoon
  Vinegar 2 Tablespoon
  Sugar 1 Pinch
  Salt To Taste
  Ghee/5 gram butter with 2 teaspoon oil 3 Tablespoon
For chop
  Tomatoes 1 Kilogram
  Coriander leaves 2 Tablespoon
  Green chilies 4 , seeded
Directions

Heat fat in a frying pan large enough to hold eggs and vegetable mixture.
Fry onions till light brown.
Add green chillies, coriander leaves, ginger, garlic, turmeric and chilli powder.
Saute for 2-3 minutes.
Add coriander, tomatoes and salt.
Simmer on low heat till thick.
Add vinegar and sugar and mix well.
Spread mixture evenly in pan, make depressions in it, break eggs in depressions and sprinkle with salt.
Lower heat and cover pan with an inverted lid.
Pour some water on lid and cook till eggs are set.
