Sooji Ka Halva

Ingredients
  Water 2 1⁄4 Cup (36 tbs)
  Sugar 10 Tablespoon (1/2 Cup Plus 2 Tablespoons)
  Cardamom seeds 1⁄4 Teaspoon, pounded
  Vegetable oil 3 Tablespoon
  Unsalted butter 3 Tablespoon
  Coarse semolina 3⁄4 Cup (12 tbs)
  Raisins 1⁄4 Cup (4 tbs)
  Slivered almonds 1⁄4 Cup (4 tbs)
Directions

Place the water, sugar, and cardamom in a saucepan and bring to a boil over medium heat.
Turn the heat to low and simmer for 2 minutes.
Remove from the heat and set aside.
Heat the oil and butter in a large, nonstick frying pan or wok over medium heat.
Add the semolina, stir, and saute until the semolina turns a light golden color (not brown).
Add the raisins and almonds, and stir for 30 seconds longer.
While stirring continuously, gradually pour in the sugar mixture.
Reduce the heat, continuing to stir, and cook the halva for 6-8 minutes or until it is thick and pulls away from the sides of the pan.
Remove from the heat.
Serve hot.
